Homemade Waffles

 Ingredients  

▢2 cups all purpose flour

▢1 tablespoon baking powder

▢½ teaspoon salt

▢2 tablespoons sugar

▢2 large eggs divided

▢1 ⅔ cups milk

▢⅓ cup melted butter or oil

▢1 teaspoon vanilla extract

Instructions 

Preheat the waffle iron according to the manufacturer's directions (or to 400°F if your waffle maker has a temperature gauge).

Place flour, baking powder, sugar, and salt in a large bowl. Whisk to combine.

In a small bowl, mix egg yolks, milk, butter, and vanilla extract. Set aside.

In a separate medium bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note

Add the egg yolk mixture to the dry ingredients and stir to combine. Gently fold in the egg whites.

Drop by large spoonfuls onto greased waffle iron until most of the wells are covered. Close the lid and cook for about 3-5 minutes or until golden brown

Pumpkin Pancakes

 Ingredients

▢2 Cups All Purpose Flour

▢3 Teaspoons Baking Powder

▢1 Teaspoon Salt

▢1 1/2 Teaspoons Ground Cinnamon

▢1/2 Teaspoon Ground Ginger

▢1/2 Teaspoon Ground Nutmeg

▢1/4 Cup Brown Sugar

▢1/4 Cup Granulated Sugar

▢1 Teaspoon Vanilla Extract

▢1 Cup Pumpkin Puree

▢2 Large Eggs

▢4 Tablespoons Butter Melted

▢1 1/2 Cups Milk


Instructions

Preheat griddle or large non-stick skillet to medium heat.

In a large bowl whisk together the flour, baking powder, salt, cinnamon, ginger, and nutmeg.

In a separate medium bowl, whisk together both of the sugars, vanilla extract, pumpkin puree, eggs, melted butter, and milk.

Pour the wet ingredients over the dry ingredients and whisk to combine. The batter will be lumpy, do not over mix.

Set the batter aside for 5 minutes.

Butter your griddle or spray with non-stick cooking spray if desired. Pour out 1/3 cup of batter for each pancake and spread into a circle.

Cook each pancake for approximately 4 minutes per side.

Serve pancakes with butter, syrup, whipped cream, nuts or any other favorite toppings.

Texas Casserole

Blend together 10 eggs, 3 T sour cream, and salt and pepper to taste.  Put in 9x13 greased baking dish and bake 8 minutes at 400 degrees.

Brown 1 lb sausage, 1 small green pepper, and 1 small chopped onion.  Drain well and place on top of egg mixture.

On top of meat mixture, spread 1 (10oz) can of Rotel tomatoes with chilies (drain Rotel if desired).

Sprinkle 8 oz of grated cheddar cheese, 8 oz of grated mozzarella cheese, and 8 oz of cube velveeta cheese on top

Refrigerate overnight.  Bake for 30-45 minutes at 350 degrees.
